This Whole30 feels like its going way faster than the last one. It just feels normal now, like I’m just eating. I don’t overthink it all (which is new for me). Before the last Whole30 and this one I cleared all my cupboard and fridge. It’s nice to know I can just go for the food in my house and eat it, no guilt. I definitely recommend this, especially on your first time – it’s so easy to fall off the wagon if there are quick, easy treats at arms length.

I bought an immersion blender this week. So shit got exciting. Hello, Paleo Mayo!

Day twenty-two: Monday

Breakfast: Egg cups. These went down a treat in week three, so I made some more.

Lunch: Chicken and roast vegetables.

Dinner: Tuscan herb and almond flour crumbed chicken with sweet potato fries and steamed broccoli. On the side I we had some Paleo Mayonnaise, one plain and one with dried chilli flakes stirred through. Amazing.

Day twenty-three: Tuesday

Breakfast: Egg cups with baby spinach and a black coffee.

Lunch: Chicken and chill salad.

Dinner: Cracklin’ chicken with roast vege, all in one tray in the oven: sweet potato, red onion, carrot, garlic, Brussels sprouts and sliced almonds.

Day twenty-four: Wednesday

Breakfast: I worked from home in the morning so made myself two boiled eggs, 1/2 an avocado, chopped up and seasoned tomato and baby spinach. With a Nespresso coffee with frothy almond milk.

Lunch: Leftover Cracklin’ chicken with roast vege: sweet potato, red onion, carrot, spring onion, avocado, tomato and baby spinach.

Dinner: “Bangers & Mash”. My boyfriend is English, so loves all the traditional meals he grew up on, which doesn’t include salad. So to keep him happy and on track I’ve been inventive on making his old favourites Whole30 approved. I got home at 8pm on Wednesday so this was whipped up fairly quick. I made sure the sausages were Whole30 approved; ie. organic with no added sugar, flour (or similar) or chemicals. Instead of mashed potato (which you can have, but I need my buttery, which is a no-no) we did our favourite mash up of broccoli, garlic and basil. For a gravy substitute I pan fried red onions, mushrooms and rosemary in some coconut oil. Then added chicken stock (also Whole30 approved) and some water and let it simmer for about 20 minutes. While it doesn’t go as thick as normal gravy, it does reduce the longer you leave it and the mushrooms, onion and rosemary all infuse the flavour faultlessly.

Day twenty-five: Thursday

Breakfast:  Egg cups with baby spinach and a black coffee.

Lunch: Chicken with roasted carrots, lettuce, cucumber, tomato and red onion. With a sprinkle of chilli flakes. Plus an apple.

Dinner: Out with the girls at London Grind. I had the cod with seaweed and pomegranate, with a side of charred cauliflower.

Day twenty-six: Friday:

Breakfast:  Egg cups with baby spinach and a black coffee.

Lunch: Tuna salad with cucumber, sprouts and beetroot. An apple and a pear.

Dinner: Roast pork with all the trimmings, no crackling.

Day twenty-seven: Saturday

Brunch: Bacon, eggs, mushrooms, tomatoes and fresh spinach.

Dinner: Lime, coconut, chilli chicken on cauliflower rice.

Day twenty-eight: Sunday

Brunch: From Nom Nom Paleo’s cookbook; Uova in Purgatorio (Eggs in Purgatory), as had on day fourteen.

Dinner: Soup from the freezer! I had butternut squash and Phil had chicken and mushroom.

Day twenty-nine: Monday

Breakfast: Egg cups with baby spinach and a black coffee.

Lunch: Chicken salad with fennel and fresh oranges.

Dinner: Steak, green beans and sweet potato.

Day thirty: Tuesday

Breakfast: Egg cups with baby spinach and a black coffee.

Lunch: Chicken salad with dill potatoes, celery, carrot and beetroot.

Dinner: Paleo nachos

Done and done! Another Whole30 in the bag! We have decided we will continue to eat paleo most days, and only break out on odd occasions – usually special occasions.
